Best done at busy times, in order to get maximum appriciation from fellow shoppers queueing behind you.
Most supermarkets have offers of 2 items for the price of 3. Simply load 2 of said item on convayer belt, wait for the assistant to put the items through, then see how long it takes for them to realise there is no third item to put through free.
Hours of fun for you and the multitudes building up behind you whilst someone gets the third item!

Good theory, but most cashiers will scan one of the offending items again so that it goes through the system and you are free to pay and go, and the next customer can be served while you wait at the end of the checkout for the runner to bring you your third item.
Another way would be to claim that there were only two of the item left on the shelf, in which case they would give you them for half price or give you a coupon for next time. This may backfire though, as a vigilant supervisor might go and check, or possibly the next three people in the queue might also have the items in question on the belt!
