I just wanted to add that when it comes to meat. It should be salted late in the cooking process as it draws moisture out of the meat and makes it less tender if it's been salted early.

I'd totally agree with that. On a more flippant note...Why are there people who, the moment food is put before them, instantly reach for the salt and pepper HAVING NOT EVEN TASTED IT!?!
