A great recipe - simplicity is all. I don't work for Sainsbury's but right now they sell a little Thai spice pack containing shallots, garlic cloves, galangal (a ginger sibling), lime leaves, lemon grass and birds-eye chillies, with recipe instructions. You prepare (cut, de-seed, etc), stir-fry - I use sesame oil - and add prawns and coconut milk to produce a very similar. curry. A little more complicated but worth the extra effort.
