The white part of the shark may be stronger tasting (can't say I've noticed a difference) but it also has a smoother texture - the red/brown parts are much chewier and can cause more of a gag reflex and leave bits between the teeth.

Dried fish is commonly available in Wolf-fish (Steinbitur) variety as well as Cod and Haddock.

Not sure if it counts as cuisine but Icelandic hotdogs warrant a mention in the 'Not so scary' section - lamb is a major ingredient in them.
