Harvest a cluster of blooms, dip them in a light batter and flash-fry in olive oil.
Apparently 'tastes fantastic' when eaten cool with a helping of gooseberry jam.

Just been watching 'Tales from the Green Valley' on BBC TV. I think these are called elderflower fritters.
