I haven't been in a Taco Cabana in a long time, but maybe I'll give it a shot - my favorite TexMex places serve Caldo de Res, basically vegetable beef soup which is at least reasonably healthy.
All of which violates one definition of "TexMex": "No frigging vegetables."

I was still a vegetarian when I lived in Texas, and Taco Cabana was my absolute favorite. They had lots of grilled vegetable and bean type dishes.

I grew up loving TexMex, and at one point was a host for college graduates being recruited by my company near Houston. My wife & I took one young New York man to a TexMex restaurant, where my wife & I proceeded to scoop up salsa with tortilla chips. The young man followed suit, then tried not to wipe his watering eyes. My advice to college grads, just say what's on your mind, like "Holy S**t!" A little illustration on TexMex:

And yes, grilled veggies and *some* bean dishes are favorites of mine - in the latter case, Charra Bean soup si, refried beans no.
