Very, very good in fact! Thank you for an absolutely fascinating look at enzymes. Great stuff.
A couple of questions, if you don't mind. I can't reference it but I remember a story on a link between corn syrup sweetening and obesity in the US (since the story was from there). Have you heard anything along those lines? The other question is a bit niggley, but you do know that sweetcorn is generally referred to just as corn in North America? A pedantic point, but it did originate from over here (well, South America actually). I know that Hootoo is a British site with British references but perhaps a "known simply as corn in the Western Hemisphere" might suffice. I don't mean to criticise, the piece is excellent.

Hi dz.Many 's for those comments. To be honest, I didn't know anything about HFCS untril my article was in PR and someone from the States suggested that I should say sonmething aboiut it. Hence, I was also unaware that you call it merely 'corn' over 'the pond'
