On holiday as a youngster I remember a Devonshire farmer's wife making it by a slightly different method.

She let the milk stand over night as per the entry, but she heated the milk to just simmering and to skin over.

She then removed the skin with a special impliment and laid it in a rectangular dish. The process was repeated as many times as a skin formed and the dish set aside in a cool place for the layers to meld together.

The result was sensational.
