In fact the reason for the sign is not to protect the customer; it is to protect the store from being sued should the customer actually fall over and hurt themselves. Possible testimony in court:
Prosecutor: And was there a warning sign clearly displayed?
Store Manager: Yes there was.
This saves companies millions of dollars/pounds etc in compensation payouts.
