Zucchini Bread

I have come across the problem of having too much Zucchini. One solution I often use is to bread(with bread crumbs) and fry the zucchini, just like one would bread and fry chicken or eggplant. My favorite solution is to actually make bread from the zucchini. Zucchini bread is a moist bread, in fact some might consider it almost to be a cross between cake and bread. Bread is an excelent solution to an over-abundance of this plant since the bread lends itself very well to freezing and can then be used for months afterwards. Following is a recipe for zucchini bread.
ZUCCHINI BREAD
Ingredients
3 eggs, beat until light & foamy
1 cup oil
2 cups sugar
3 cups flour
2 cups zucchini peeled & grated
3 teaspoon vanilla
2 1/2 teaspoon cinnamon
1 teaspoon salt
1 teaspoon baking soda
1/4 teaspoon baking powder
1 cup chopped nuts (optional)
instructions
Combine all ingredients, mix well and pour into two 5" X 9" loaf pans that have been greased and floured.
Bake at 350 degrees fahrenheit for one hour.
