how vast are the lands on which the entire monastery was built and in how much was the kitchen built? were the galleries narrow and how big the rooms of the monks were ?Did the monks share their rooms or dormatries?

The original donation was of all the lands from the Serra d' Albarda to the sea. Alcobaça is 10km inland. Not being in the Leiria region it is difficult to look up facts like that - so possibly 100 square kms?
As to the buildings themselves, the Cloister of Dom Dinis is 53 metres square = 2,800 square metres and the ground area is therefore at least twice that = 6,000 square metres? Then there is an upper storey over the northern rooms.
The kitchen is about 35m by 12m = 420 square metres.
The plan on http://www.orelhas.pt/canais/visitas_virtuais/most_alcobaca/ is approximately 1cm=1m on my computer screen.
The dormitory (Dormitório) would have been for all the monks, except for the abbot and prior who had separate rooms. This is a vast room on the next floor accessed by a staircase between the Monks Common Room (Sala dos Monges)- which was the only room they were allowed to converse in, and the Chapter House (Sala do Capitulo).
