My daughter made some yesterday too!

Variation: replace the chocolate in the recipe with walnuts, replace the choc chips with a teaspoonful of camp coffee, and replace the dark soft brown sugar with light soft brown sugar
Hey presto: coffee and walnut cookies

They're not quite as good as the chocolate, but they're very very nice...

I've used peanut butter chips before, that's nice too!

Since we're swapping cooking techniques...



Make the cookie batter in advance, scoop it into cookie-sized balls with an ice cream scoop and freeze the batter balls in a plastic baggie.

Then when you want/need cookies in a hurry, slap the frozen dough on a baking sheet and slam it into the oven.

Experience has taught me that these cookies are extra moist because of the thawing out while they bake thing that's going on.

I also just love the idea of wanting or needing cookies in a hurry! I can tell you live with a house full of women.

Actually, it's a tip I picked up on my honeymoon in Rhode Island from the gay couple who owned the bed and breakfast we stayed in...

And you know Peta, we'll always put a plate of cookies out if you want to visit...

I was given this recipe some time ago by a friend. It had "these are excellent" on the top. Well, I cooked them to the "hard biscuit" stage, and found that they were ok, but not "excellent". I decided to stick to Anzac biscuits.

Now I know. Don't cook them so much.

Off to the oven!!

I still bake these, and they're still as yummy as ever. Also tried Jimi's suggestion of freezing the dough and that worked a treat!
