The important thing to remember about eating lutefisk is that you need lost of other things to make it palateable.
My theory is that a gang of drunken vikings about a thousand years ago in a famished stupor, mistakenly put their dried fish in the lye barrel instead of the water barrel. Still hungry when the mistake was discovered, they ate it anyway. Still in a drunken stupor, they liked it.
Traditions have a way of continuing long after their usefulness passes, and therefore the scandinavians still eat the stuff.
But the Icelanders do a nice one by marinating shark-meat in amonia ...
