Quick and Easy Gazpacho

Here is a quick and easy recipe for Gazpacho. It is quite tasty and my friends that have had it keep bugging me to make more. They even schedule potlucks just so I will be forced to make some. (I get embarrased because of how easy it is though)
Get some tomato Juice.
Cut up assorted veggies (cucumber, tomato [peeled and seeded], green peppers, onions[small yellow], avocado)
Mix together. Add salt, oregona and both red wine and balsamic vinegar to taste.
It is the combination of the 2 vinegars that make this so tasty.
