I love Cajun and Creole cooking. But alas, boudin was around long before such spicy southern cookin'. Boudin, or "blood sausage," was brought over by the French.

There's a place Eagle Lake on the Louisiana side that makes the best and hottest boudin in the world! It's called T-Leo's.
