instead of flavouring the meat with the liquid smoke i flavour the sauce,cook some chicken in a frying pan with butter and garlic when its done add enough cream to make some sauce,then add a splash of liquid smoke,and cook for about a minute more,this lets the flavour of the chicken come through and not just the flavour of the liquid smoke,i serve it with buttered noodles,and everyone loves it and has asked for the recipe,or comes round when they know i,m cooking it.

does anyone know where i can find liquid smoke in britain. i used to use it when working in the hard rock cafe as a prep chef. barbeque sauce does not taste the same without it. cheers
