Just spent Chinese New Year in Guizhou with some friends from there that think of me as their brother. Had a great time, really good food, usually hot pot.
The hot pot was usually made by
using about a third of a cup of lard in a wok over the
coal stove, adding at least a cup and a half of hot
peppers, and stirring while the lard melted. Then they
would add one whole chicken (maybe half a chicken), or
about the same amount of pork, chopped into bite-sized
pieces. About a tablespoon of salt was sprinkled on
top.
