The Mexican Cervesa

Wow! It's been some time! But I am back in the saddle.
In preperation for a bountiful beer brewing summer, I've decided to go with a light, sweet recipe for the anticipated beauty of June.
The Mexican Cervesa
3.3lbs. Cooper's Light Malt Extract
1 lb. Light DME
1 lb. Rice Syrup Solids
1-1/2 oz. Hallertau Hops Plugs
1 tsp. Irish Moss
California Ale Yeat - White Labs #
We start off with 2-1/2 gallons spring water boiling happily in my steel pot.
Add Liquid Malt and DME - Bring back to boil
Add Hops and Irish Moss - Boil for 20 min.
Add Rice Syrup - Boil for 5 min.
Add to Primary
Cool
Pitch
And wait!
This is a simple one, but I anticipate a Corona like light beer which to drink boldly with a lime and relax in the beautiful rays that shine on New England!
Well, they better, cuz it's been raining for two weekes straight!

A Winter Festival?....

In the aftermath of the Fall Home Brew Festival, I have begun devising the insanity of the Winter Home Brew Festival. I have thought about this fascinating event and have a few ideas. Ariston, my dear sir, please advise accordingly.
1. A Tentative date in mid-Feb.
2. Brew list consisting of:
A Christmas Ale
A Nut-Brown
A Coffee Stout
An Irish Ale
Any others? changes?...
3. A combination of Ariston's and My brewing efforts.
4. A Boston/Philly Location?...
Lets us plan...

Jimbo Jones' - Fall Homebrew Beer Festival - Update on the brews

With the festival but 2 days away, I have had a small number of issues with the brews.
Issues Log
1. Upon purchasing the needed 2 kegs to complete the 4 beer line-up, I discover, one week before the fest, that the beer shop is out of used kegs (they had sold their last two the night prior). So I had t ospend 100 American greens to buy 1 new one.
2. Upon asking about the 2nd needed keg, I discovery that it would be 2 weeks before restock.
3. The new keg may have a seal problem. So I tried to charge it alittle yesterday, and low, i dicover that the in and out plugs ave no o-rings, thus Beer was dispersed through my attachments and sprayed onto my kitchen floor. This happened to the Doran's Ginger Honey Lager.
4. No joy on the 4th keg. I have 20 plus people comming, I may have to revert to chilling the primary where the O'Nallan's is and syphon into classes as a flat irish ale.
5. The brew shop also ran out of attachments for the kegs. I have two dispensing nozzles and 1 charger with 2 keg attachements.
Well, this will not deter me, nor the lunatics that are planning on drinking every ounce of beer in my apartment. (or so I have been told)
First things first, I need to get O-rings. I need to get more dispensing nozzles.
And then the festivities may commence

O'Nallan's Irish Ale

Ok, here's one that I came up with off the top of my head.
1/2~1 lb. Crushed English Crystal Malt
5 lbs. Mutons Dark DME
1.2 lb. Rice Syrup Powerder
1 oz. Hallertau Plug Hops - Boiking
1 oz. U.K. Fuggles - FInishing
1 Tablespoon Ground Cardamom
#WLP004 Irish Ale Yeast - WHite Labs
Steep grains for 20 minutes in 1-1/2 gallons water
Add DME, RIce SYrup, and Boiling Hops for 30 minute
Add Cardamom and finishing hops for 10 minutes
Cool and Add up to 5 gallon and PITCH!!!
I can't wait to try this one out!
