Ok, here's one that I came up with off the top of my head.
1/2~1 lb. Crushed English Crystal Malt
5 lbs. Mutons Dark DME
1.2 lb. Rice Syrup Powerder
1 oz. Hallertau Plug Hops - Boiking
1 oz. U.K. Fuggles - FInishing
1 Tablespoon Ground Cardamom
#WLP004 Irish Ale Yeast - WHite Labs
Steep grains for 20 minutes in 1-1/2 gallons water
Add DME, RIce SYrup, and Boiling Hops for 30 minute
Add Cardamom and finishing hops for 10 minutes
Cool and Add up to 5 gallon and PITCH!!!
I can't wait to try this one out!

So I used 1 tablespoon full of Cardamom.....May have been to much, but the beer smells fantastic in the primary!!

Ok, so 2 days in the primary and the Irish all decided to repaint my kitchen!
Well, after half a roll of Brawny and a pint, the fermentation locks are clean and still bubbling away!
I am so psyched!!!!!!

Well well well, after nie over 2 months in the primary, , I finally kegged this sucka! 1/15/06. (It sat in the primary from Oct.28th!)
So what to say of this after a solid week in the keg?
Interesting tang, most notabley from the full tablespoon of cardamom that I added, and a suprising light taste with a dark amber hue which reminds me of a Killington's Irish Red, though I had done nothing to redden it.
Well, be that as it may, the taste is enjoyable, brilliantly refreshing, and tastefully set as perhaps the oddest of my "shot from the hip" recipes.
Oh, the alcohal content? you ask. Well, like many who know me, I also forget to do something in the course of a brew, and specific gravity was this batches mark. Yet, it tastes light with only the mild bite of alcohalic persuasion. I'd say a 5% standard on this run.
Here's to brewing!!
