Hi Anushodhak,

I've been subediting two of your entries: How to make Paneer at home (<./>A1143794</.&gtsmiley - winkeye and Paneer Bhurji: a simple Paneer recipe (<./>A1143802</.&gtsmiley - winkeye. Just wanted to give you chance to read through them before I send them back to the Editors.

At the start of the 'How to make' entry, you describe a few paneer dishes - how would you describe paneer bhurji? Also, what are rasgulla, rashogulla, ras malai?

If there's anything you're not completely happy with in the entries, just let me know.

Hi J,

How to make paneer looks great smiley - ok.
Though there are some changes in Paneer Bhurji I would like to make as
In the ingredients I forgot ½ tea spoon mustard seeds.smiley - sorry
Cumin seeds and Mustard seeds has to be added when oil is hot and just after that put in the onions for shallow frying.
Adding cumin seeds and mustard seeds to hot oil in the start is known as splitting, which is ritualistic in Indian cooking like putting vinegar and Soya sauce in Chinese cooking. Sorry for botheration, I should have checked it earlier.

Bhurji is common term for scrambled egg in India, grated paneer looks like scrambled egg so the term Paneer Bhurji smiley - cheesecake
Rasgulla and Rasmalai are sweet dishes smiley - drool and one can get these in any ethenic grocery store in UK as tined food. Other day I got rusmalai from Waitrose smiley - smiley

Ok, I've made the changes to the Paneer Bhurji entry - no bother by the way! It's better to get everything sorted now, than have to ask for it to be changed at a later date...

Maybe I wasn't terribly clear in my first post. In the 'How to make' entry, it's got '...dishes like paneer pasanda (a white gravy dish), palak paneer (paneer with spinach), paneer biryaani (paneer with rice), mater paneer (paneer with peas), paneer tikka masala (a barbecue dish)...'

Could you give me a similar description for paneer bhurji? And also for rasgulla, rashogulla, ras malai? The names themselves sound very appetising - but I'd also like to know what the dishes are!

Hi J,
I had a look thanks for making the changes smiley - ok though after putting mustard and cumin seeds we need not wait otherwise it burns. Seeds make a cracking sound in hot oil that is enough smiley - smiley
Paneer Bhurji ( a dish made with grated paneerwith other vegetables)
Rasgulla or Rashogulla (balls of paneer immersed in sweet sugary water called chashni)
Rasmalai (flat round paneer immersed in sweet creamy milk)
