Hello lazybones!
To 'add a friend' be signed in, go to the personal space of the intended friend and click on 'Add to Friends'. That's it. Do nothing else and don't do it again. You won't see anything happen. But your own PS will now include that member in your friends list.

To 'delete', be signed in, go to list of friends in your own PS and click on 'delete' as required.

Congratulate me, finally I succeeded in doing something, well I can't say"on my own" as you helped me, but allow me to say it, and don't laugh at me. You know Kirsti said it for me first, but I went to "MY space" not hers, and I looked down next to the "Leave a message", saw nothing of course. Well, you deserve some more tea and cake

As far as I know, you cannot. The software arranges them in alphanumerical order, I think. Although, it may sort numbers then letters . . .
