Okay 2legs inspired me yesterday to put a poolish on for the first time in months.
I had plenty of French flour left I was pleased to discover in the old cupboard.
Made the baguettes earlier with the nicely frothed poolish. Two rises. Just gone in oven.
Made a concoction of good olive oil, crushed homegrown Italian garlic, a variety of garden thymes blitzed, plenty of salt and freshly ground black pepper corns.
Once the baguettes are baked and cooled...shall use concoction to make a type of garlic bread. This is a new experiment for me..and lovely to get back to a bit of home cooking again.

Hey that was good.
Everything went brilliantly well with the baguettes..except I forgot to properly flour and oil the baguette racks. So they were mostly stuck to it..
Rescued some....and used the rest for the garlic bread..done in a new way. Put the bits of baguette in a baking tin. Poured on the garlic/thyme/olive oil concoction. Threw in some sundried tomatoes in oil.
Put back in oven for about 12 mins.
Good taste..even though it was a very unpretty thing to look at..had a bit of strong cheddar with it as well which was good.
(For months now my ability to taste things is affected by my mood disorder problem..and I still can hardly bear the thought of meat...I tasted this a bit which was nice..and good to cook and eat something not from a tin or packet...and actually use my brain for cooking again.
I hope this improvement lasts. Thanks 2legs. Even if things don't last..this was very good.
I defo must get back into bread baking. Shall send off for more French flour.

I've not made garlic bread with my baguettes in ages and ages.... I was putting like nearly an entire bulb of garlic in, and BoB-knows how much butter plus oil and herbs of course
Another one I did one time which was good, and which might work well for baguettes, was when I made some flatbreads, and put the minced up onion, garlic, and chillies, plus dried herbs and seeds into the dough mix, actually must do those over the top hot spicey flatbreads again... they were pretty much hotter than the dansak I made to go with them
Actually the garlic bread I made last time, was basically the meal in itself, rather than just being an accompanyment to go with something else Enjoy the cooking, the bread making helps keep me saine... err... or insane... I forget which way round it is...

heartburn! pah! you don't know what indigestion and heartburn is, until you've eaten a dozen hot rolls the moment they're out of the oven! actually.... despite the more rich and over the top excesses of my diet, I rarely get indigestion or heartburn and the homemade bread and suchlike is so much more digestible than shop bought
