One of life's simple pleasures is pouring a bunch of stuff into a pot at random and winding up with a tasty meal.

We go to Whole Foods every two weeks and stock up on fresh produce (our weekly grocery stop wraps all of their stuff in plastic wrap and I'm trying to avoid the extra waste). I've got dessicant eggs in the fruit and veggie bins to slow wilting, but from time to time I find myself with a few different varieties of veggie that are starting to wilt and that I'd like to mash into one meal.

Stews and casseroles are great for this, but it's much too warm out now for those. And so we have the contents-of-the-fridge stir-fry.

Last night's was delicicious.

Threw a bit of olive oil into the pan and sautéed a leftover half of yellow onion until tender. Added a package of firm tofu, cut into cubes. Cooked till the tofu was lightly browned. Tossed in carrot matchsticks, two chopped zucchinis, a small sliced bok choy, and two sliced green onions. Added about a cup and a half of water, a sprinkle of red pepper flake, and about a tablespoon of five spice powder. Cooked till the veggies were tender-crisp, then stirred in a couple tablespoons of liquid aminos. Served with some nice soba noodles.

It was smiley - drool

I did a good one of these the other day

Sweet potato
Baby corn
Green beans
Cauliflower

Boiled it up a bit, mashed the potato, chopped up the rest very fine, mixed it in. Made about 4 slices worth of bread crumbs, mixed 2 slices worth of that in, cous cous seasoning, pepper sauce, sweet chilli sauce, bbq sauce, one egg white all mixed in. Formed into crude burgers, rolled about in remaining bread crumbs. Fried. Served with rice and more bbq sauce. Yummy.smiley - biggrin

I found a fab powdered egg replacer that does wonders for holiding things together. I can try to make this sometime.

Best thing I've made so far out of whatever was left over was a spicy red lentil dal, served over cubes of pumpkin and potato fried and slightly caramelised with spices and brown sugar smiley - drool
