I've never liked Borscht. WOnder if I should try it again sometime.
I wasn't feeling up to cooking much yesterday, so I just chopped the greens, laid them in a casserole dish, sprinkled caraway on top, plopped the whole beets on top of it all, added about a cup of water, and baked for a couple hours. Scraped the peels away, sliced, and served with the greens.
Dinner was a potato and leek soup with fresh thyme.
The mushroom thing sounds lovely. And I don't really even *like* mushrooms. I'd eat that, though. Especially with poached eggs. I absolutely love poached eggs.
