I would like to make damson gin. Has anyone else tried this?
I have plenty of damsons. Do I proceed as for Slow Gin?
TIA

yes continue as you suggest, make damson gin just the same as sloe gin
question for you to ask yourself. have you ever tried making damson vodka? i know that there are a million recepies for
vodka cocktails and jellies, but i've found that my damson vodka is someting that very few people have ever allowed past thier lips let alone tried making it.
i hope you get this message in time to pick more damsons, should you need more. i know you said that you have lots of them. i picked 8lbs today (07/09/02), and they will be too soft next weekend if only the most sun drenched are left.
i write with only my own knowledge, from which i've found that to get them one week before they are soft while still on the tree. if they are firm, they hold up well in an apple and damson crumble, evan after freezing.
note on damson vodka, adjust qty. of sugar at start of making, depending on taste. less if before food and vice versa
oh dear now i know you want to make twice the qty.
enjoy!

It is possible to make all sorts of fruit spirits with gin or vodka but all the fruits must contain stones ie:-- cherries plums peaches apricots as well as sloes, as it is as much the chemicals in the stones that give the flavour as the flesh of the fruit. My recipe is as follows.
Half fill any container with any scored stoned fruit, fill in the gaps with white sugar until level, top up container with either gin or vodka, during first week shake daily, after shake weekly for 3 months, finally strain through coffee filter paper overnight. now the best part gently sip with roast pork crackling and all the trimmings.

A friend of mine uses the leftover residue in dry still cider to make a further very enjoyable drink although I have not a name fot this concoction??
