I hope everyone reading these conversations has seen my risotto recipe in the edited guide smiley - smiley


Anyway, I have an update to it. Rather than melting the onion first then adding the rice off the heat, try adding the rice straight to the hot oil and almost toasting it. After a minute or so (make sure you stir vigorously) it will let off a fantastic smell. Now add the chopped onions and cook for a few minutes before starting the wine/vermouth/stock routine. The onion will be slightly crunchier than if you melt it beforehand. The dish takes less time to cook this way, but the texture is slightly different. See what you think.

Also, when I was in Italy I had some fantastic rice ice cream. Anyone have a recipe?

rice ice cream-- if you go to some health food/organic type stores, you can find "rice cream" in with the regular dairy stuff. It varies widely but can be very tasty.

We can buy rice cream in tins in Australia, but I have never seen rice cream ice cream.
