the universe may very well be playing mind games with you but what is a fairy cake? what is it made of and how does it taste? i have never heard of this particular kind of cake before. if anyone has a recipe for this cake send it to me.

Hi there,
A fairy cake is a small sponge cake, decorated with icing and a cherry.
The cake is usually a simple 'victoria' sponge, flavoured with vanilla or lemon, but you can make other cakes in the same way. You'll need paper cases, which like are those used for muffins but smaller.
4oz Butter
4oz Caster Sugar
4oz Self-raising Flour
2 Eggs
Vanilla Essence
2 oz icing sugar (this is a very fine ground sugar, like white powder)
lemon juice / water
Cherries
Preheat oven to 190°C: 375°F: Gas 5.
Whisk together the butter and sugar until light and creamy.
Add the beaten eggs gradually with a little of the flour.
Fold in the remaining sieved flour and add the flavouring.
Divide equally between about 12 to 24 paper cases, place in baking tray and cook for 10-15 min. The smaller the cakes, the faster they cook, so check tiny ones after 5 min.
Turn out on to a wire rack to cool.
Mix the icing sugar with a little lemon juice untill it is easy to pour, but still quite thick. Spoon some icing on the top of each fairy cake and decorate with a cherry.
You can try other flavours, like orange or chocolate fairy cakes, and use a variety of decorations. Its a great party food.
