A note about this mention.
Some theory is given that the Olmec creation myth involved the mating of a woman with the Jaguar God.
There are some stone and ceramic Olmec pieces depicting this union, which gives some creedence to a creation myth.
Another possibility are that the "were-jaguar" images are Olmec warriors wearing jaguar skins. That the elite warrior classes were favored of the Jaguar God.
