The South Island may have the "best" ski fields but excellent skiing can be found in NZ's North Island at Tongariro National Park.
Try Turoa, Whakapapa or Tukino. The Chateau Tongariro is an excellent place to gather for a few hot toddies afterwards.
As an added bonus, Mount Ruapehu is an active volcano which often supplies spectacular shows free of charge.

Yes indeed. A great day on Ruapehu is as good as a great day anywhere in the world. The most under-rated skiing in NZ is probably the off-trail skiing on Ruapehu. The slopes above Tukino skifield are sublime, and the slopes between Turoa and Whakapapa are also a wonderful experience. Walking and skinning (with alpine touring gear) opens up a new world beyond the lifts. Almost enough to make an ex North-Islander homesick!
