5 tbsp annatto seeds
As I suspected, some nice person has put the entire recipe on the web. You can find it by googling on "Puerco Pibil" & "Billy Billy". Doesn't say how to turn my side garden into R. Rodriguez's fab film studio, though.
My windowsill "peppers" amount to one paltry shoot at the moment, but it's only the first year I've tried growing them, so I've seeded another pot of compost.
My bedroom window is now quite crowded with pots of (potential) basil, chili peppers, mixed peppers & calabrese!
