Spiced Banana Muffins

These easy-to-make spiced banana muffins1 make a nice treat for winter tea, and are a great recipe for using up overripe bananas.
This recipe makes 12 muffins.
Dry Ingredients
- 250g self-raising flour
- 115g caster sugar
- 1 tsp baking powder
- ½ tsp bicarbonate of soda
- 1 tsp ground ginger
- ½ tsp ground cinnamon
- ½ tsp ground all spice
- pinch of salt
Wet Ingredients
- 2 bananas, mashed
- 2 eggs
- 75g melted butter
- 120ml milk
- 1 tbsp golden syrup
- 1 tsp vanilla extract
Method
Mash the bananas with a fork. Melt butter and allow to cool. Using a wooden spoon:
- Mix all dry ingredients in a bowl
- Mix wet ingredients in another bowl
- Add wet ingredients to the dry ingredients
- Mix well until all ingredients form a smooth batter
- Add mashed banana and mix well
Fill muffin cases to ¾ full with the mixture. (Note there will be small lumps of banana!)
Bake at 190°C until golden brown, for 15 to 20 minutes depending on the size of case used. To check if cooked, pierce one muffin with a skewer. If the skewer comes out clean your muffins are ready to eat.
Tip: This recipe can be altered to taste; use less spice or try adding raisins and a drop of rum!
