Two important things to know about Knock Airport, it's very small, and it's in the middle of nowhere. Both cause their own unique problems. As it's small there's precious little to do to kill time whilst waiting for a flight. Don't be in a hurry to go through passport control to the departure gate, there's nothing back there but a fairly typical souvenir and booze shop and not quite enough seating. Also it will cost you more to get a drink in the departure lounge than it will upstairs in the cafe. As for being in the middle of nowhere, make sure you bring sufficient money for quite a steep taxi fare. You can hire a car form there, but you need to book it in advance, the office there gets so little trade it isn't manned unless it need to be. There's also allegedly a bus to Claremorris but I've never seen it.
