'Catalan Style' Spinach (work in progress)

This is work in progress. I need to work out the correct weights of ingredients because I'm writing this from memory and I usually work this out by sight!
This recepie is a quick, healthy and very tasty dish, that works well for lunch or dinner. I'm not sure if it is really 'Catalan Style', I call it that because my Dad invented it after a trip to Spain, and it approximates something he was served in a restaraunt.
Suitable for vegetarians and vegans. Serves 3-4
Ingredients:
- One large, or two small onions.
- 200(?)g spinach leaves
- A few ~50(?)g mushrooms
- 75-100(?)g pine kernels
- 1 tsp. garlic salt
- 150(?)g pasta (whatever kind you like best)
- Olive oil or vegetable oil
Method:
- Roast the pine kernels in some oil, in the oven at about 180c until golden brown.
- Meanwhile, chop the onion, and slowly fry in the oil on a low heat, until really soft. You might want to use a deep frying pan or wok, as the spinach takes up a lot of space at first.
- Finely chop the mushrooms, and add them to the onions. Continue to fry until the mushrooms are tender.
- Add the garlic salt, and then the spinach. Cook for a futher 3-5 minutes, until the spinach has shrunk and is soft and stringy.
- Finally, stir in the roasted pine kernels and then serve over the pasta.
