Gnomon - time to move on

Good question. The standard allows for three levels of header: header, subheader and sub-subheader (implemented as Bold text - use and </P&gtsmiley - winkeye. You want to have superheader, header and subheader. THere's no official way of doing this. One possible approach would be to have the text "Putting Enzymes to Work - " included at the start of each Header. But this is clumsy. Alternatively, you could demote all the headers by one level, but I don't like this approach.

Ask yourself, do you really need that extra 'superheader'?

FB' says very little about the action of enzymes, which is the essence of my article. I need to mirror something of what is in FB's Entries to contextualise the content of mine.AHowever, his Entries are hyperlinked from mine.

<MI've put right those typos. smiley - ta Gnomon.

I'll have a bit more of a think as to whether I need to change the phraseology of fungi being a group of plants. To the lay person they are plants, and I'm wondering whether it's a bit pompous/pedantic to specify them as a separatate phylum.

smiley - erm It seems a bit inconsistent for h2g2 to require punctuation be removed from things like i.e. and B.C., but to be inserted into things like 1000 years!

P.S. I haven't forgotten/ignored what you said about the 'lock and key' mechanism. I 'm just waiting for some 'quality time' to think how to combine these two paras.

Content:

?-amylase -- is that actually the name of the enzyme or is it something you've left out?

I thought the stuff from the calf's stomach was called 'rennet', not 'rennin'.

Plants are not used today in Scottish cheesemaking - this is not an entry about Scotland, so why mention it?

"The application of enzymes in these processes is a combination of economic and cosmetic"
There's something left out at the end of that sentence. Words missing, maybe?

The sentence about the domestic cat seems to have been misplaced.

Phrasing:

The process of cheesemaking, like beer making, is a complicated one --> Like beer making, it is a complicated one
(The previous sentence started with "the process of cheesemaking" as well).

It's amazing what one doesn't notice oneself (one only sees what one wishes to see - hence the benefit of PR. I'll work through those.
However, just to clarify a few points:

?-amylase: This is supposed to be alpha (Greek symbol) amylase, but I haven't learned how to do this yet. Hopefully someone will tell me.

Likewise '15 degrees centigrade --> 15°C'.

The part of the calf's stomach that contains the glands is called 'rennet', the enzyme is 'rennin'.

Plants are not used today in Scottish cheesemaking - this is not an entry about Scotland, so why mention it? Because the article I obtained this info. from was 'Scottish'. Not being an expert on this, I don't know what the situation in the rest of the UK is. However, I'll re-phrase this bit to reflect that.

"The application of enzymes in these processes is a combination of economic and cosmetic"
There's something left out at the end of that sentence. Words missing, maybe? This was Pantherlady's phrasing. I think if I incorporate a 'the after 'comnination of...', this should read more elegantly.

You can do an alpha by putting in the code α

The semicolon is part of the code.

You can do a degree sign the same way ° or you can just type it Alt+0176 or cut-and-paste it from my posting.

smiley - erm Perhaps you can shed some light on this. My neighbour told me never ever to eat kiwi's with milk products. He said eaten together the milk and kiwi form a big undigistable clump in the stomach. The gullible bird I am, I followed his advise so I don't mix kiwi with yoghurt.
Is my neighbour right in advising me as he did?

Hmm, I've not come across that one before, Krabatt. Try Googling 'kiwi fruit, milk' and see what you come up with.

Well, here's a recipe that actually appears to combine the two; so I can't believe there's a real problem - unless your neighbour really was referring to the feathered variety!.

Oh yes, and they are going extinct if it weren't for the Bank of New Zealand.

As for the enzyme my neighbour spoke the truth, smiley - biggrin for once.

Here it is: http://www.innvista.com/health/foods/fruits/kiwi.htm

"...a digestive enzyme similar to that found in papaya and pineapple. It cannot be placed in jello as its enzymes will prevent setting. These same enzymes will also curdle milk so they cannot be used in making ice-cream. Cooking will destroy the enzymes."

Googgeling around I found many recipes with kiwi combined with milk. smiley - bigeyes.

Ah yes, I do remember that now - that it prevents jellies setting; not that it produces an indigestible mass.

I came across it a year or so ago when we had some surplus (unfeathered!) kiwis and were thinking of making a jelly
containing them. The enzyme in them and pineapples is called bromelain. This is why a slice of pineapple is often placed on top of gammon steak - to tenderise it. I intended to put this into my Entry but totally forgot. Perhaps I'll do it now and also mention the kiwi fruit smiley - ta krabatt.

Yes but look, it says this enzyme curdles milk!
And that cooking will distroy this enzyme. So to my reading I can only use cooked kiwi fruit in my Yoghurt.
