Sweet Potato Casserole

2 Tbs butter
1 cup heavy cream
1/4 cup brown sugar
Peel potatoes and cook in water untill soft.
Drain potatoes and mix with butter in a food processor or blender.
Whip the cream. Fold half of the whipped cream into the potatoes and put into a buttered casserole dish.
Put remaining whipped cream on top and sprinkle with brown sugar.
Bake at 350 degrees for 30 minutes.
