Chips 'n' Cheese

As the name of this delicacy suggests it is found in the humble chip shop. It consists of a portion of deep fried chunks of potato (see Chips [Fries for those from across the Atlantic]) covered with a dairy by-product made from pressed milk curds (see Cheese), best served after beer.

There are many combinations of different types of ‘chip’ and different types of ‘cheese’. For example there is the ‘chip shop chip’ (large greasy chip made from fresh potatoes) and ‘cheddar cheese’ this is often found in the traditional chip shop. My personal favourite combination is found in the pizza shops of Glasgow, Scotland; deep fried ‘frozen chips’ with a mixture of ‘mozzarella’ and ‘cheddar’ cheeses on top.
