Key Lime Pie

Ingredients:
Combine egg yolks, lime juice and water in medium saucepan. Mix in ½ cup sugar, gelatin, and salt. Cook over medium heat, stirring frequently until mixture begins to boil vigorously. Remove from heat, stir in 2 teaspoons of the lime zest, and chill3 until soft peaks form easily with spoon
Whip egg whites until firm peaks, but not stiff, then add remaining sugar and continue whipping until stiff peaks, and shiny. Fold into cooled egg & lime mixture.
Fold ½ of this mixture into the cooked and cooled pie shell
Beat whipping cream to stiff peak, you may then fold in half of the whipping cream with remaining egg & lime filling, and layer this onto the pie
Spread remaining whipped cream over pie, forming deep crescents with large dollops of cream
Sprinkle remaining lime zest on top!
Cover and place in fridge for as long as you can force yourself to wait!
