2 Rivers Meet in Christchurch: The River Avon and The River Stour. Both great Rivers. The both start somewhere in the midland and end up coming together and going into the sea in Christchurch.

2 rivers meet in Winnipeg, too. One is the Assiniboine that flows through the southern part of the province, and the other is the Red that flows from the US to Lake Winnipeg. I don't know if I'd call them favourite rivers, they're both polluted, and smell in the summer.
In times past they were important waterways, taking fur traders and settlers around the province, and transporting goods to and from places like Brandon, Portage la Prairie, Selkirk, and Winnipeg. Goods are still shipped to reserves on Lake Winnipeg, sailing from Selkirk on the Red River. There's a Manitoba Marine Museum at Selkirk with boats that plied the routes on the Red. I'll try and find the link.
