A Conversation for Reducing Food Waste
Storing fresh meat
There is only one thing worse than being Gosho, and that is not being Gosho Started conversation Oct 16, 2010
Raw meat should be stored at the bottom of the fridge in case any blood or meat juices drip onto food below. While it doesn't specifically say that in the BBC Food link, it's required practice in commercial kitchens.
It's a bit more difficult to do that in a domestic fridge because the salad/vegetable drawer is usually underneath the bottom shelf, so raw meat is best put on a plate or, even better, in a dish or some kind of high-sided container like a baking or roasting tin so there's no chance of cross-contamination from any juices that might leak out of the packaging.
