It perhaps should be noted that the installation of OS X has the option to format the destination drive. You can choose to format it with either UFS (Unix File System) or HFS (I can't remember what this stands for smiley - winkeye but it's the old MacOS format).
In my experience, if you use HFS OS X will run slightly faster. Which is odd, because I'd have expected UFS to be faster.
