Catfish is a Southern (USA) specialty. Traditionally it is filleted and fried in a cornmeal batter. Ketchup is the condiment of choice for fried catfish. Catfish is also delicious baked, grilled or broiled.
The state of Mississippi in the United States has turned catfish into an industry for the state. The fish are raised in ponds and harvested when they are of the appropriate size.
