A Conversation for How to Make Elderflower 'Champagne'

Hiya, why is this recipe different to all the others that ive read in that this can be kept for such a long amount of time? All the other recipes state that it should be drunk within 2 weeks. Please advise as I dont wanna waste it by not drinking it.
