That's sort of like the pit bbq, I have enjoyed in Mexico (they usually use heads of cattle wrapped in agave leaves, stuck in a hot pit for a day - actually quite delicious). I getting the shovel out this weekend to make my hangi (in the neighbours plot).
I am little off-put to see no recipes for Chicken Sashimi - takes less time to cook. Have anitbiotics on hand.

Neighbours came back this weekend - so I just trimmed the bushes.
