Last Summer a group of (mainly German) friends and I were planning to take a boat through the Kiel Canal from the North Sea to the Baltic. However we got to Norddeich on the train and just stayed there and on the nearby East Frisian Islands (mainly Juist and Norderney, but I believe the others are just as nice). Very few non-Germans ever visit, but the car-free islands with long sandy beaches - the islands are really just large sand dunes with grass on them - are really worth a visit.
