"honed into" - confuses me there - do you mean he actually wrote the jokes which were then refined, or he polished up already-written jokes?

Good question... Seinfeld came up with jokes and ideas for jokes, as well as ideas for plot points, and then the film was put together using only the best jokes and ideas.
It was the ideas that were honed, rather than the jokes themselves.
