banoffee pie
Banoffee pie is a dessert made of bananas, biscuits and caramelised condensed milk. I don't have a recipe for this, but I do have a warning, so keep reading if you are thinking of making this delicious, dangerous dish.
To caramelise condensed milk it must be boiled - in the tin - for quite a while in a saucepan of water. It starts off white and runny, and ends up as a sticky brown solid. At the start of this process you may find yourself involved in a conversation about whether or not to pierce the tin before boiling it. Trust me, the correct answer is "pierce the tin".
Even worse than not piercing the tin is letting the pan boil dry and not piercing the tin. This may well leave you:
- very surprised
- covered in toffee
- burnt
- cleaning the ceiling at 2am
So think once, think twice, think "lets pierce the tin and keep an eye on the pan".
