Hi:
I would love to have a recipe for hummus. It contains an ingredient with which I am not familiar...........panini? Where do I get that? Or is panini something totally unrelated?

Sorry it's taken me so long to reply. My life has been turned upside down, and things are a little crazy around here. This is a good recipe for hummus:

2 to 3 scallions, roughly chopped
1 head of garlic, roasted and peeled
handful of fresh chopped parsley (or 2 tablespoons dried)
6 tablespoons tahini (sesame seed paste, similar to peanut butter, should be in the same aisle of the store, or in your local health food store)
juice of 2 lemons
2 cans chickpeas

Whirl the first three ingredients in your food processor until well chopped. Add the next three and process until smooth, scraping down the sides of the container to get all the chickpeas ground. Store in a tupperware container in your fridge for up to two weeks, and serve with good bread, olive oil, more parsley, yogurt or feta.

Thank you for the recipe. I'm sorry your life is in turmoil. That can't be pleasant. I almost had it right--panini/tahini........I'll have to get some the next time I'm in town. We live in a rural area and only get to town once or twice a week. It's a 25 mile drive one way......smiley - biggrin With gas $2.77 a gallon, it's liable to be reduced to once a week! smiley - smiley
