I enjoyed reading this again and found I have a couple of questions about the beef stock - how much beef stock would you need for 4 people? Also, a very novice question would be: where does the beef stock come from? Is it made by boiling some bones?

I think you have the following options:
- make beef stock yourself with bones or cheap meat and vegetables
- I think you can buy it in glasses
- be very cheap and take cubes
For 4 people I think you will need about one litre or a bit more. Quite a bit more if you boil the nockerl in the soup as they soak up more. If you opt for boiling them in salt water you don't have that problem.
