This sounds good (although I personally would rather leave out the meat completely than buy 'fake meat'. But I guess that's just me)
One little thing I always find really helps to improve lasagna is adding some water to the dish before putting in the first layer of pasta. Otherwise the bottom layer often gets harder than the ones above because there isn't any liquid underneath.
