Why do we Tip?

As an aside to my comment on the service at the bombay balti resturant I would like to add a comment on why we tip that came out of a conversation we had while deciding not to tip.
We Tip in resturants if the waiter is particularly attentive and helpfull. Moreoften than not this means, prompt service on arrival and constantly checking if we need anything.
This means we spend less time in the returant and we buy more while we are there.
Therefore we tip waiters if they are good at getting money out of us and refuse to pay them when they help us to spend less.
